Will these hoods fit the standard rim brake Shimano Ultegra ST-R8000 or electronic Di2 shifters?

No, this rubber skin set is engineered strictly to fit the unique, larger body architecture of hydraulic disc brake, mechanical shift levers (ST-R8020 and ST-R8025). Mechanical rim brake shifters (ST-R8000) and electronic Di2 hydraulic shifters (ST-R8070) feature completely different, much narrower internal composite bodies. Attempting to force these hoods onto alternative shifter bodies will result in excessive loose material, loose overlapping seams, or torn rubber.

What is the easiest workshop method to install these replacement hoods without tearing the rubber?

Replacing shifter hoods can be tricky due to the tight retention fit. To make the process smooth, roll the old hoods forward inside out and slide them off over the front of the lever blades. Before sliding the fresh pair on, apply a light coating of rubbing alcohol (isopropyl alcohol) or mild soapy water to the inside walls of the rubber skin. This acts as a temporary lubricant, letting you slide and stretch the new hood over the lever body easily.
